  • Owning a restaurant has always been a dream of Brandi and Levi Tines. The Lebanon couple had owned a catering business for the past ten years and both Brandi and Levi's families have owned restaurants.
"Food is our passion, so wanting to own a restaurant was natural for us," Brandi said. "But we wanted the location to be something that fit."
And something clicked for the couple when they visited the old Drynk location in the Waynesville Square, at 304 Historic 66 East Historic Route 66.
"Nothing felt right until we saw the Drynk location," she said. "It was the perfect small building with the bistro feel, so we jumped."
Brandi said that they really enjoy the Waynesville area.
"We connected with the people here and it was a nice mix of culture and we love it."
After seeing the building, the Tines moved quickly. They signed for the building on Oct. 1 and opened Vidies Bistro Express and Catering on Oct. 15.
Vidies is known for its ever-changing menu and wide variety of food from different inspirations and cultures . The lunch menu changes on a day-to-day basis.
"Its the largest variety of food you can get," Brandi said. "We really do care and love what we do. We like the fact that we can wake up in the morning and prepare something completely different."
Brandi said that their menu features both family recipes from both her family, who are mainly of German descent, and Levi's family, who are mainly of Italian descent. But sometimes, Levi likes to get creative and comes up with recipes out of thin air.
"Levi's the creative one," Brandi said. "Sometimes he throws the craziest stuff together and it just works."
Brandi said that since October, they have learned how much work restaurants require, but they still enjoy it.
"I have a lot more respect for people who own restaurants," she said. "I really enjoy the one-on-one time with customers, you don't get that personal time with customers in the catering business. It's a lot of hard work, but it's worth it to see the smiles on peoples faces."
Vidies is open for lunch from Monday to Friday from 10 a.m. to 3 p.m and carry-out dinners are available on Tuesdays and Thursdays from 3 p.m. to 6 p.m. On Friday's Vidies is open for reservation dinners only.
