Next month, beers from the all-new Independent Fermentations should begin hitting liquor store shelves and bars.
Independent Fermentations, a new brewery based in Plymouth, just received its farmers brewers license.†pic
Paul Nixon of Plymouth owns Independent Fermentations, also known as IndieFerm. He is also the brewery. Nixon is a long-time homebrewer, brewing beer out of his barn, where the brewery is now housed.
The brewery will be brewing two-barrel batches in a non-heated barn, so different yeasts will be used for different seasons. During the winter, IndieFerm will brew using German alt beer yeast, while Belgian abbey yeasts will be used during the spring and fall, and saison yeasts will be used during the summer.
The brewery plans on using as many Massachusetts ingredients as possible, including grains from Valley Malt in Hadley, locally grown hops and local blueberries and native yeast.
The first beer to be released will be DoppelAlt, followed by the RyePaleAle.
